I have a secret recipe for times like this, it's 4-Ingredient Oatmeal Banana cookies. They are healthy and low on calories. Vegan "Shuba"

Everybody is getting ready for New Year's Eve here. We have two traditional dishes that will be present on 90% tables in all Slavic countries. One of those is known as a "Russian Salad" and the other one is called "Shuba". In the next few paragraphs we will learn how to cook it. Non-vegan version of "Shuba" is made with hering and layered vegetables. I have substituted the hering with nori sheet for the taste. To be honest, I am not a fan of Slavic cuisine as it contains too much fat to my mind. But it is so fat for a reason. Honestly, there is no way you can have a banana berry ice cream for breakfast in winter and then go outside and not die. That is why those of you who like travelling to cold countries might find this recipe useful.

Protein Bomb Anti-Burgers

Today is my first day at home and I have been lazy half of the day. I woke up with a burning desire to make some tasty veggie burgers, but then I had a change of heart and decided to cut the calories as well as multiply the "healthiness" of the meal. That's how this AntiBurger recipe was born. I have named them AntiBurgers, because unlike normal ones they have uncooked patty, and the one I used is simply a pate which forms a patty-like substance on our bun. Today I am sharing my lentil mushroom pate recipe for the "Protein Bomb" Antiburgers.

Today I am sharing another cashew cake recipe. Yes, we will have plenty of these here, but no worries each of them is unique. For this specific cashew cake I had to combine two recipes: 1) I have replaced the usual nut crust with a chocolate cake base just to cut the amount of nuts I consume, 'cause I have been really eating a lot of them lately 2) for that same reason I had to add bananas to the cake mixture.

Smoothie is one of my favorite breakfasts. It's so easy to make one, and I even manage to do this at work. Of course, I had to buy a blender for the office, but still I can't imagine living a day without a blender. In winter, when it's cold I usually use milk as a base for my smoothies, just to increase its nutritional value and in summer I usually use clean water instead.

Everyone knows that avocado can and should be used as a healthy substitute for sauces which are usually high on calories. I am a huge fan of roasted potatoes and I find them even more delicious if eaten with a sauce. But let's face it, potatoes are kind of high on calories themselves taking into consideration that they are baked with oil, so even a healthy avocado sauce kind of makes the dish too high on calories. Meet my new experiment: broccoli sauce. I am more than satisfied with the result I must say. Carrot Cake Cupcakes with Cashew Cream

Carrot cake cupcakes are definitely my favorite dessert. I love everything about them, from the moment my home is filled with that amazing cinnamon scent until the last crumb, which you should usually fight for in the kitchen. And the best part is that they are made with Carrots! that makes them kind of guilt-free dessert, which is not exactly true, but still you are cutting some calories for sure, I mean seriously the space is occupied but carrots, not by flour or sugar. At least that's what I keep telling myself. And let's not forget about amazing cashew cream, which is much healthier than its non-vegan analogue.

Do you like arugula just as much as I do? Then add as much of it to your everyday meals as you can as it is incredibly useful. Arugula contains a wide range of vitamins: vitamin E, B-group vitamins, vitamin C, vitamin A and vitamin K. Moreover, 100 g of arugula contain a daily dose of vitamin K, which is very important for healing your wounds. Arugula also contains zinc, magnesium, selenium, sodium, copper, phosphorus, manganese and iron. And all this just for 25 kcal!

I’ve been vegan for two years already and people around me don’t seize to amaze me. They have already accepted the fact as well as the reasons for my refusal to eat meat and fish, but they still look crazy surprised when they learn that I actually don’t eat eggs or dairy. They are all like: “But why? It’s not like cows really suffer, we only take the milk the cow doesn’t need”. I guess, nobody ever thought about the origin of cow’s milk. I will not go into those cruel details, ‘because my vegan motto is: “Always focus on positive things”. I will just ask you to accept that me giving up on milk is as logical as giving up on meat.
