Carrot cake cupcakes are definitely my favorite dessert. I love everything about them, from the moment my home is filled with that amazing cinnamon scent until the last crumb, which you should usually fight for in the kitchen. And the best part is that they are made with Carrots! that makes them kind of guilt-free dessert, which is not exactly true, but still you are cutting some calories for sure, I mean seriously the space is occupied but carrots, not by flour or sugar. At least that's what I keep telling myself. And let's not forget about amazing cashew cream, which is much healthier than its non-vegan analogue.
